Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Rolled Stuffed Flank
Ingredients
Directions
The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Clean and dry the inside flank, removing the fat.
Spread the seasoned bread stuffing evenly over the flank, about 1 inch thick.
Roll the flank tightly and tie securely with white twine.
In a pan, place the sliced onion, carrot, and turnip. Lay the rolled meat on top of the vegetables.
Dredge the rolled meat with flour, salt, and pepper.
Add the bay leaf, parsley, celery, and water or stock to the pan.
Cook and serve
Cook in a preheated oven at 400°F (200°C) for 15 minutes.
Cover the pan with another pan.
Reduce heat to 300°F (150°C).
Cook slowly for 4 hours, basting frequently.
Once done, strain out the vegetables.
Make a gravy from the cooking liquid to serve with the meat.

What each ingredient does
- Inside flank
- Lean beef that is rolled around the stuffing and becomes tender during slow cooking.
- Bread stuffing
- Forms the filling that flavours the meat as it cooks inside the roll.
- Flour
- Dusted on the meat, it helps the surface brown and thickens the cooking liquid for gravy.
- Onion, carrot, and turnip
- Sliced vegetables laid under the meat, adding aromatic flavour and sweetness to the cooking liquid.
The step that matters
Slow cooking with the pan covered. Long, gentle heat with the pan covered keeps the lean flank moist and breaks down its connective tissue, so the meat becomes tender rather than dry.
Swap the onion
How well each one fits the dish's main ingredients (bread, carrot, turnip, flour, pepper, parsley, celery):
