Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round steak
Provides the meat base, which is ground or finely chopped to form the cakes.
Egg
Binds the chopped meat so the flat cakes hold together while cooking.
Flour
Dredging coats the cakes for browning, and cooked in the pan fat it thickens the sauce.
Butter or drippings
Fat for sautéing that browns the cakes and carries flavour into the sauce.

The step that matters

Browning the cakes on both sides. Searing in hot fat creates browned crust through the Maillard reaction, adding flavour. Cakes placed in a crowded or cool pan steam instead and turn grey and pale.

Swap the onion

How well each one fits the dish's main ingredients (pepper, egg, flour, butter, mushroom):

  1. Shallotfits better
  2. Spinachfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against pepper, egg, flour, butter, mushroom. Candidates are from the same food group and used in at least 100 recipes.
