Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Stuff the fillet with the seasoned bread stuffing and skewer it into shape.

  3. Cover the top of the fillet with thin strips of salt pork or lard using a larding needle.

  4. Season the fillet with flour, coarse sea salt, and black pepper.

Roast and serve

  1. Roast for 25 minutes per pound.

  2. Make gravy from the drippings in the pan.

  3. Serve with horseradish.

What each ingredient does

Veal fillet
Forms the main body of the dish, cooking to a tender, moist centre when roasted.
Salt pork or lard
Laid over the top, it melts during roasting, adding fat that keeps the lean veal moist and flavourful.
Bread stuffing
Fills the fillet, adding bulk and flavour while absorbing juices as it cooks.
Flour
Coats the surface, helping the exterior brown and thickening the pan drippings for gravy.

The step that matters

Roast for 25 minutes per pound. Veal is lean and dries out quickly, so timing by weight matters. Overcooking toughens the meat, while the stuffing and fat need enough heat to cook through evenly.

Swap the horseradish

How well each one fits the dish's main ingredients (veal, bread, pork, flour, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Shallotfits better
  4. Horseradishthe original

Fit is the average pairing score against veal, bread, pork, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
