Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Braised Calf's Liver

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Lard the liver in three rows or place several strips of salt pork over the top.

  2. In a baking pan, add the sliced carrot, turnip, onion, and salt pork.

  3. Place the liver on top of the vegetables.

  4. Add the stock or hot water, salt, peppercorns, and parsley.

Braise

  1. Cover with another pan and cook in a 350°F (175°C) oven for 2.5 hours, basting often.

  2. Add more stock or water if necessary.

Make the gravy and serve

  1. To make gravy, melt the butter in a saucepan, then stir in the flour until brown.

  2. Gradually stir in 1 cup of the strained stock from the pan.

  3. Season with additional salt and pepper if needed, and pour around the liver.

What each ingredient does

Calf's liver
Is the main meat, becoming tender through slow, moist braising.
Salt pork
Adds fat and savoury flavour that seasons the liver and the braising liquid.
Butter
Fat that carries flavour into the gravy and helps form its roux.
Flour
Thickens the gravy with the butter as a roux, giving it body.

The step that matters

Cover and braise at low oven heat with regular basting. Slow, moist cooking breaks down the liver's connective tissue gently. Liver turns dry and grainy if overcooked, so keeping liquid around it and checking it helps keep it tender.

Swap the onion

How well each one fits the dish's main ingredients (liver, pork, carrot, turnip, parsley, butter, flour):

  1. Leekfits better
  2. Parsnipfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against liver, pork, carrot, turnip, parsley, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
