What each ingredient does

Flour
Thickens the sauce as its starch swells in the liquid, and browns in the roasting pan for flavor.
Giblets
Provide the main flavor and the cooking water that becomes the base of the sauce.

The step that matters

Stirring constantly while adding the giblet water. Flour browned in fat clumps when liquid is added too quickly or unevenly. Constant stirring spreads the starch through the liquid so it thickens smoothly instead of forming lumps.
