What each ingredient does

Chicken
Provides the main protein, which becomes tender through long simmering in the sauce.
Flour
Dredging helps the chicken brown, and the browned flour thickens the sauce.
Onion
Softens and sweetens as it cooks, building the base flavour of the sauce.
Curry powder
Supplies the aromatic spice flavour once browned in butter.
Strained tomatoes or sour apple
Adds acidity that balances the richness and sweetness of the sauce.
Milk or cream
Adds richness and body to the finished sauce.

The step that matters

Brown the flour, sugar and curry powder in butter. Toasting the spices and flour in fat releases their aroma and removes raw flour taste. Stopping before dark browning keeps the flavour mild and prevents a bitter, pasty sauce.
