Ingredients
- 4 eggs
- 1 egg (slightly beaten)
- Salt and pepper to taste
- 2 tablespoons finely chopped parsley or chives
- A few cooked mushrooms (optional)
- 1 cup heavy white sauce
- Breadcrumbs for coating
- Oil for frying

Cook the eggs in water just off the boil for 30 minutes.

When cold, remove the eggs from the shell.

Chop the egg whites finely and sift the yolks.

Mix the chopped whites and sifted yolks with 1 slightly beaten egg.

Season with salt, pepper, and chopped parsley or chives.

Add cooked mushrooms if desired.

Mix with heavy white sauce and set aside until cold.

Mould the mixture into croquettes, dip in breadcrumbs and beaten egg.

Fry in hot oil until golden brown.

Serve with white sauce or add peas, small beans, mushrooms, or asparagus tips.
