Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the edible base and the soft, moist filling once mashed.
Butter
Adds richness and moisture to the mashed filling and helps the breadcrumbs brown.
Breadcrumbs
Form a crisp, golden topping when baked in butter.
Grated cheese or chopped almonds
Add richness and a bit of body to the filling; optional.

The step that matters

Top with buttered breadcrumbs and brown in the oven. The topping needs enough oven time to turn golden and crisp. Butter promotes browning through the Maillard reaction, so the topping should be watched until it reaches a golden colour.
