Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut a cross on the flat side of each chestnut shell.

  2. Place the chestnuts in a 400°F (200°C) oven until the shells burst open.

  3. Remove the shells and skins.

  4. Boil the chestnuts in salted water until very tender.

  5. Drain and mash the chestnuts through a potato ricer or colander.

  6. Season with butter, pepper, salt, and a little cream.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
