Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Provide the main flavor and bulk of the sauce.
Butter
Forms the roux with browned flour, adding richness and body to the sauce.
Browned flour
Thickens the sauce and adds a toasted, deeper color and flavor.
Brown stock
Supplies the liquid base and savory depth of the brown sauce.
Cream
Adds richness and smoothness, and helps thicken the white sauce.
Egg yolk
Enriches the sauce and thickens it further when added gently at the end.

The step that matters

Add the diluted egg yolk to the sauce. Egg yolk can curdle or scramble if it meets hot liquid directly. Diluting it with cream first and adding it gradually off the heat or at low heat lets it thicken the sauce smoothly.
