Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the stock into a firm, sliceable mold once chilled.
Whipped cream
Adds lightness and richness, softening the texture of the set mold.
Chicken
Provides the main body and protein of the salad filling.
Stock (in the method)
Carries the flavour of the chicken and vegetables and becomes the setting base.

The step that matters

Reduce the stock to 2 cups, then remove the fat when cold. Too much liquid leaves the mold soft, and fat left in the stock can make the set mold greasy and cloudy. Chilling lets the fat rise and solidify so it can be lifted off cleanly.

Swap the lettuce

How well each one fits the dish's main ingredients (chicken, gelatin, cream, pepper, egg, truffle):

  1. Asparagusfits better
  2. Capsicumfits better
  3. Potatofits better
  4. Lettucethe original

Fit is the average pairing score against chicken, gelatin, cream, pepper, egg, truffle. Candidates are from the same food group and used in at least 100 recipes.
