Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main body of the salad, cut into dice for a tender bite.
Gelatine
Sets the cream and lemon mixture so it holds its shape when unmoulded.
Heavy cream
Adds richness and a soft, airy texture to the set mixture.
Lemon juice
Adds acidity that brightens the rich cream and sweetbreads.

The step that matters

Dissolve the gelatine fully before mixing. Gelatine only sets properly when completely dissolved in hot liquid. Undissolved granules leave grainy spots and weak patches, so the mould may not hold its shape.

Swap the mace

How well each one fits the dish's main ingredients (onion, lemon, cream, cucumber, lettuce):

  1. Tarragonfits better
  2. Capersfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against onion, lemon, cream, cucumber, lettuce. Candidates are from the same food group and used in at least 100 recipes.
