What each ingredient does

Chopped meat
Provides the savoury, meaty body that gives mincemeat its traditional filling texture.
Chopped suet
Adds richness and a silky mouthfeel as it melts during slow cooking.
Chopped sour apples
Supply moisture, tartness and body that balance the sweetness.
Brown sugar
Adds sweetness and depth, and helps preserve the mixture.
Molasses
Adds dark colour, sweetness and a robust, slightly bitter flavour.
Brandy
Adds aroma and alcohol that helps preserve the mincemeat during storage.

The step that matters

Adding the brandy and rose water after removing from heat. Alcohol and rose water are volatile and lose aroma and strength when boiled, so they are added off the heat to keep their flavour and preserving effect.
