Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped and then poached, they form the light, airy floating islands.
Powdered sugar
Sweetens the whites and helps stabilise the beaten foam.
Milk
Poaches the whites and forms the base of the custard.

The step that matters

Poaching the egg whites. The milk should stay at a gentle simmer, not a rolling boil. Strong heat can toughen the delicate whites and make them rubbery or cause them to break apart.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar, milk):

  1. Pecansfits about as well
  2. Almondthe original
  3. Cocoafits about as well
  4. Walnutfits about as well

Fit is the average pairing score against egg, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
