Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Whipped to stiff peaks, it adds a light, airy foam to the punch.
Sugar
Adds sweetness and helps keep the frozen mixture from freezing too hard.
Lemon juice
Adds acidity that balances the sweetness and brightens the mint flavour.
Crème de menthe
Supplies the mint flavour that defines the punch.

The step that matters

Folding in the beaten egg white. Fold the stiff egg white in gently and just before freezing so the foam stays airy. Stirring it vigorously or letting it sit will deflate the foam and make the texture denser.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar, lemon):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
