Ingredients

Directions

  1. Boil sugar and water together without stirring until the thermometer registers 340°F (170°C) or until the syrup crackles in cold water.

  2. Remove from heat and drop pieces of fruit into the syrup one at a time using a candy wire or two forks.

  3. Place the dipped fruit on an oiled surface or rice paper to dry.

  4. For oranges, carefully divide the sections and let them dry for several hours before dipping.

  5. For grapes, wipe them dry and leave the little stem on to prevent moisture.
