Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the roast

  1. Preheat the oven to 400°F (200°C).

  2. Place the beef roast on an iron rack in a pan and dust it with flour and coarse sea salt.

  3. Roast the meat in the oven until well browned to retain the juices.

  4. Add 1 quart of water and 1 onion to the pan and cook slowly for 1.5 hours.

Make the gravy

  1. Before removing the meat, mix flour and water to make a paste, avoiding lumps.

  2. Remove the meat and onion from the pan and place the pan on the stove.

  3. Bring the water to a boil and gradually add the paste, stirring constantly until the gravy thickens.

  4. Season the gravy with salt and pepper to taste.

What each ingredient does

Beef roast
Forms the main body of the dish; browning during roasting builds savory flavor and color.
Flour
Dusted on the meat for browning, and mixed with water to thicken the gravy.
Onion
Cooks slowly in the pan liquid, adding aromatic sweetness to the drippings.

The step that matters

Stirring the flour paste into the boiling liquid. Adding the flour paste gradually while stirring constantly disperses the starch evenly, preventing lumps and allowing the gravy to thicken smoothly.

Swap the onion
