Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Kidneys
Main protein that becomes tender during the long, slow simmer.
Flour
Cooked in melted butter to form a roux that thickens the stewing liquid.
Butter
Fat that carries the flour and helps form a smooth, richly flavoured base.
Lemon juice
Adds acidity that brightens the stew and balances the richness of the kidneys.

The step that matters

Browning the flour and butter. Cooking flour in butter until smooth and brown builds flavour and thickens the sauce. If it is stirred too little, lumps form or it scorches. Adding the kidneys too early or without stirring can leave the sauce thin or uneven.

Swap the clove

How well each one fits the dish's main ingredients (lemon, pepper, butter, flour):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against lemon, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
