Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that traps air and gives the cake its light, airy structure.
All-purpose flour
Provides structure once the batter sets in the oven.
Granulated sugar
Sweetens the cake and helps keep the crumb tender and moist.
Cream of tartar
Acidifies the egg whites, stabilizing the foam so it holds its volume longer.

The step that matters

Gently fold in the sifted flour, sugar, and salt. The batter depends on the air trapped in the beaten egg whites. Vigorous stirring deflates that foam, leaving a dense cake that does not rise well. Folding with a light hand keeps the air intact.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, sugar, cream, egg):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against flour, sugar, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
