Raised Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare the dough for raised pie.

  2. Cut the base at least ½ inch thick and dock with a fork.

  3. Prepare the oval bottom and wash it with egg.

  4. Roll out dough ½ inch thick into a 1-inch wide strip.

  5. Wet the ends and wrap the strip around the oval piece on the base.

  6. Fill the case with bran to within ½ inch of the top.

  7. Cover with a thin layer of dough with a small hole in the center.

  8. Wash the outside with egg and bake at 350°F (175°C) until golden brown.

  9. Once cooled, cut out the top and remove the bran.
