What each ingredient does

Ripe figs
Provide the main fruit body and natural sweetness that becomes the cake's pulp.
Sugar
Adds sweetness and helps the pulp hold together as it dries.

The step that matters

Stirring the pulp as it reduces. Constant stirring keeps the sugars and fruit from scorching on the bottom of the pot and prevents lumps, giving a smooth, even texture once dried.
