What each ingredient does

Sugar
Provides sweetness and, with the water, forms a syrup that helps preserve the fruit.
Ohia fruit
Provides the main flavor and the fruit pieces that soften and turn clear in the syrup.

The step that matters

Cooking the fruit until clear. Sugar syrup firms and clarifies fruit as it cooks. Stopping too early leaves the fruit firm and cloudy, while cooking too long can break it down and make the preserves mushy.
