Why it works: Chicken and butter are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 13,902 recipes. Both carry 2-furfurylthiol, which smells coffee, roasted. The science ↓
Baked Chicken
Ingredients
Directions
The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Split the chicken lengthwise and soak in cold water for 30 minutes.
Wipe the chicken dry and place it in a dripping pan, bone side down, without water.
Roast
Bake in a hot oven (400°F / 200°C) for about 30 minutes.
Remove from the oven and season with salt, pepper, and butter.
Finish and serve
Stack the chicken pieces closely and place in a pan of boiling water, covering to keep moist until served.
Boil the giblets in a little water, then pour the giblet water into the dripping pan.
Thicken the giblet water and add chopped giblets to make gravy for serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Chicken
- Forms the main body of the dish; its dry surface helps it roast rather than steam.
- Butter
- Adds fat and richness, carrying flavour over the chicken's surface.
- Giblets
- Simmered in water to make the stock that becomes the gravy.
