Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 400°F (200°C).

  2. Wash the wild fowl quickly and remove any visible shot.

  3. Rub the fowl inside and out with butter, pepper, and coarse sea salt.

  4. If using, stuff the fowl with bread stuffing and place in a roasting pan.

  5. Add enough water to cover the bottom of the pan.

Roast and make gravy

  1. Roast in the oven, basting frequently with butter and water for about 30 minutes.

  2. To make gravy, add 1 teaspoon of flour to the drippings and color with caramel.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wild fowl
Forms the main protein that is roasted until cooked through.
Butter
Adds fat and richness, and helps the skin brown while basting.
Flour
Thickens the pan drippings to form the gravy.
Caramel
Darkens the gravy to a richer brown color.

The step that matters

Basting with butter and water during roasting. Basting keeps the surface moist and helps it brown evenly. Too little liquid in the pan can let the drippings scorch, which would spoil the gravy.
