Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the rich, tender meat base that gives the croquettes their main texture.
Butter
Adds fat and richness, and forms the base of the roux with the flour.
Flour
Thickens the butter and stock into a binding sauce that holds the croquettes together.
Stock or water
Hydrates the roux into a thick sauce that sets as the mixture cools.
Cooked chicken or turkey
Adds bulk and mild meaty flavor to the filling.
Mushrooms
Add moisture and earthy flavor to the filling.

The step that matters

Cool the mixture fully before shaping. The thickened filling must cool and firm up before shaping; if it is still warm and soft, the croquettes will not hold their form and may break apart when fried.
