Why it works: Potato and ginger work together. They rank in the top 12% of all ingredient pairs, and cooks put them together in 992 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Hop Yeast

Ingredients

Directions

  1. Place the hops in a bag and add them with the potatoes to the water.

  2. Boil until the potatoes are done, then strain the potatoes and press the water from the hops bag into the kettle.

  3. Return the potatoes to the kettle and ensure there are 3 quarts of liquid, adding more water if necessary.

  4. Add the sugar, salt, and ginger, and bring to a boil.

  5. Thicken the mixture with 3 tablespoons of flour smoothed with cold water.

  6. Pour into a crock and let it cool.

  7. Stir in 1½ cups of good yeast.

  8. When bubbles form thickly on top, cork it tightly in a jug, reserving 1½ cups for the next batch.

  9. Store in a cool place, such as a cellar.
