Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Mix the flour and salt in a bowl with the cold milk.

  2. Heat 1 cup of milk in a double boiler until scalding.

  3. Add the flour mixture to the hot milk and stir until thick.

  4. Remove from heat and let cool slightly, then add the beaten eggs.

Bake and serve

  1. Pour the mixture into cups or a single baking dish.

  2. Bake at 400°F (200°C) or steam until set.

  3. Serve hot with your preferred sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the thickened base that gives the pudding its structure as it sets.
Eggs
Set when baked, giving the pudding its firm, custard-like structure and rise.
Butter
Adds richness and fat, contributing to tenderness and flavor.

The step that matters

Stir the flour mixture into the hot milk until thick. The starch must be fully cooked in the hot milk to thicken smoothly without lumps. Adding the eggs only after cooling slightly prevents them from scrambling, which would ruin the smooth, set texture.
