What each ingredient does

Egg yolks
Thicken the custard and add richness as they set with the syrup.
Cream
Adds richness and a smooth, soft texture to the frozen dessert.
Chestnuts
Give the pudding a dense, starchy body and a nutty flavor.
Almonds
Add body and a nutty flavor to the mixture.
Sugar
Sweetens the base and helps keep the frozen texture soft.

The step that matters

Stirring the beaten egg yolks into the hot syrup. Adding hot syrup too fast or overheating the yolks can scramble them. Removing the pan from heat first and stirring steadily lets the yolks thicken smoothly.

Swap the pineapple
