Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Break down during simmering to thicken the soup and give it body.
Celery
Releases flavour into the cooking water, adding savoury aroma to the soup.
Onions
Build savoury depth as they soften and sweeten during the long simmer.
Milk
Adds richness and a smoother, creamier mouthfeel to the finished soup.

The step that matters

Rubbing the mixture through a sieve. Pressing the cooked vegetables through a sieve breaks down their fibres and produces a smooth texture. Skipping or rushing this step leaves the soup gritty or stringy.
