What each ingredient does

Chestnuts
Form the bulk of the filling, giving a soft, starchy body when mashed.
Butter
Adds fat for richness and a smooth, moist texture.
Beaten raw egg
Binds the mashed chestnuts and sets as the filling bakes.
Hard boiled egg
Adds firmness and texture to the mashed filling.
Oyster
Sits in the centre of the filling and cooks in its own juices, adding briny flavour.

The step that matters

Bake until light yellow. The raw egg sets as it heats. Overbaking tightens the egg proteins further, making the filling dry and rubbery, so watch for the light yellow colour and stop there.
