What each ingredient does

Sweet milk
Forms the liquid base that cooks with the corn meal into a thick, moldable mush.
White corn meal
Thickens the milk as it cooks, giving the mixture body so it sets firm enough to slice.

The step that matters

Cooling before cutting. The cooked mush must cool and firm fully in the pan; cutting it while warm makes soft blocks that break apart and absorb excess fat when fried.
