Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt fish
Provides the main savoury flavour and the bulk of the balls.
Potatoes
Mashing with the fish gives the balls a soft, light body.
Egg
Binds the mixture so the balls hold their shape when fried.
Butter
Adds richness and moisture to the mashed mixture.

The step that matters

Cooking the potatoes and fish. Overcooking makes the potatoes waterlogged and gluey, so the mash becomes dense and loses its lightness. Draining well and mashing while hot keeps the texture light.
