Pan Oysters

Ingredients

Directions

The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare the toast

  1. Cut stale bread into slices and remove the crusts.

  2. Toast the bread and butter it.

  3. Place the buttered toast in a pan (patty pans are best).

  4. Moisten the toast with 3 to 4 teaspoons of oyster liquor.

Bake and serve

  1. Layer oysters on top of the toast and sprinkle with pepper.

  2. Add a small piece of butter on top of each oyster.

  3. Cover the pan tightly and place it in a hot oven (400°F / 200°C).

  4. Cook for 7 to 8 minutes, or until the oysters' beards are ruffled.

  5. Remove the cover, sprinkle lightly with coarse sea salt, and cook for 1 more minute.

What each ingredient does

Oysters
Provide the main filling, cooking gently in the trapped steam until plump and just set.
Butter
Adds richness and moisture, helping the toast brown and the oysters stay tender.
Stale bread
Forms the base; its dry, open crumb soaks up the oyster liquor and butter.
Oyster liquor
Moistens the toast and adds a briny flavour that seasons the dish.

The step that matters

Cover the pan tightly and cook for only 7 to 8 minutes. Covering traps steam that cooks the oysters gently. Overcooking toughens the oysters, as their proteins tighten and squeeze out moisture, so watch for the edges to ruffle and remove the cover promptly.
