Mock Quail

Ingredients

Directions

  1. Cut the tenderloin into three pieces, then cut each piece in half lengthwise.

  2. Pound each piece until tender.

  3. For each quail, prepare 1 prune, a few raisins, a few currants, 3 or 4 blanched almonds, and a piece of apple.

  4. Roll the filling between 2 pieces of tenderloin.

  5. Wrap strips of bacon around the roll until completely covered and secure with toothpicks.

  6. Insert 2 toothpicks covered with raisins into each roll to represent legs.

  7. Serve several rolls together on a platter with the legs sticking up.
