What each ingredient does

Knuckle veal
Provides meat and collagen that dissolve into the liquid and gel as it cools.
Hard boiled eggs
Add firm texture and visual contrast in the set aspic.
Lemon juice
Adds acidity that brightens the flavour of the rich broth.

The step that matters

Slow cooking of the veal. Gentle, slow simmering draws collagen from the knuckle into the liquid. A hard boil can cloud the broth and weaken the gel needed for the aspic to set firmly.

Swap the mace

How well each one fits the dish's main ingredients (veal, egg, lemon, onion, carrot, parsley, cinnamon):

  1. Marjoramfits better
  2. Thymefits better
  3. Nutmegfits better
