What each ingredient does

Chicken
Provides the main protein and bulk of the salad.
Hard boiled eggs
Egg whites add mild body and the mashed yolks enrich the dressing.
Butter
Adds richness and a smooth, creamy texture to the dressing.
Vinegar
Adds acidity that brightens the dressing and balances the richness.
Sugar
Adds sweetness that balances the sharpness of the vinegar and mustard.
Celery
Adds crisp texture and a fresh, mild flavor.

The step that matters

Mashing the yolks fine and adding the dressing gradually. Mashing the yolks finely lets them blend smoothly into the butter and vinegar, so the dressing becomes an even emulsion rather than lumpy. Adding the liquid vinegar slowly helps the fat and liquid combine without separating.

Swap the cabbage

How well each one fits the dish's main ingredients (chicken, egg, celery, butter, sugar, mustard, vinegar):

  1. Capsicumfits better
  2. Chivefits better
  3. Shallotfits better

Fit is the average pairing score against chicken, egg, celery, butter, sugar, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
