What each ingredient does

Rice
Cooked slowly in milk, it softens and thickens to form the creamy body of the soufflé.
Milk
Cooks with the rice to create a creamy base that sets as it cools.
Heavy cream
Whipped into stiff peaks, it adds air and lightness, giving a soft, mousse-like texture.

The step that matters

Stir the whipped cream into the rice mixture. The rice mixture must be cool before the cream goes in. Warm liquid deflates whipped cream, losing the air that gives the dish its light texture.

Swap the raspberry
