Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream butter and sugar until light and fluffy.

  2. Add egg yolks one at a time, mixing well after each addition.

  3. In a separate bowl, combine flour and baking powder.

  4. Gradually add flour mixture to butter mixture, mixing until just combined.

  5. Fold in beaten egg whites gently until fully incorporated.

  6. Pour batter into greased loaf pan and smooth top.

Bake

  1. Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake its tender, rich texture.
Sugar
Creams with butter for aeration and adds sweetness and browning.
Egg yolks
Add richness, fat and emulsifying power that help bind the batter.
Egg whites
Beaten and folded in to add lift and a lighter crumb.
Flour
Provides the structure that sets the cake as it bakes.
Baking powder
Releases gas in the oven to help the cake rise.

The step that matters

Folding in the beaten egg whites. Egg whites hold air that gives lift. Folding gently keeps that air in the batter, while vigorous stirring would deflate it and produce a dense cake.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
