Nut Ice Cream

Ingredients

Directions

Make the caramel

  1. Melt ½ cup granulated sugar in a saucepan over medium heat until golden brown.

  2. Add ½ cup boiling water and simmer for 10 minutes.

Make the base

  1. Scald 1 pint thin cream in a double boiler until hot.

  2. Stir in ½ cup sugar, ¼ teaspoon salt, and the caramel until the sugar melts.

  3. Let the mixture cool, stirring often.

  4. While cooling, prepare the pecans by removing any brown substance, rinsing in boiling water, and drying thoroughly before chopping fine.

  5. Stir the chopped pecans into the cooled cream mixture.

Freeze and ripen

  1. Freeze until stiff, then remove the beater and pack into a mold if desired.

  2. Let ripen for about 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Thin cream
Provides the fat and body that make the ice cream rich and smooth.
Whipped cream
Adds air and lightness, giving a softer, creamier texture.
Granulated sugar
Sweetens the base and, when caramelized, adds deep toasted flavour.
Pecans
Add crunch and a toasted, nutty flavour to the finished ice cream.

The step that matters

Melt the sugar to golden brown. Sugar caramelizes over medium heat only within a narrow colour range; too pale gives little flavour and too dark turns bitter. Watch closely and stop at golden brown.

Swap the pecans

How well each one fits the dish's main ingredients (sugar, cream):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits better
  4. Pecansthe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
