Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet candy base that sets into a firm, chewy texture as it cooks.
Vinegar
Acidity helps prevent the sugar from crystallising too early, keeping the candy smooth.
Butter
Adds fat for a richer flavour and a softer, more tender bite.

The step that matters

Cook until a soft ball forms in cold water. Stopping at the right point controls the final texture. Cooking too little leaves the candy soft and sticky; cooking too far makes it hard. The cold-water test checks how much water has boiled off and how concentrated the sugar has become.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, vinegar, butter, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Hazelnutfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, vinegar, butter, vanilla. Candidates are from the same food group and used in at least 100 recipes.
