Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the sweet candy base that hardens as it cools.
Butter
Adds fat that softens the candy's texture and richness.
Vinegar
Acidity helps prevent sugar from crystallising into a grainy texture.

The step that matters

Beat the mixture until it becomes quite white. Beating while the sugar mixture cools encourages fine crystals to form, turning the candy opaque and creamy rather than glassy. Stopping too early or too late changes the final texture.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, butter, vinegar):

  1. Almondfits better
  2. Sesamefits better
  3. Soybeanfits about as well
  4. Walnutthe original

Fit is the average pairing score against sugar, butter, vinegar. Candidates are from the same food group and used in at least 100 recipes.
