What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable structure as it cools.
Strawberries
Provide the main flavor and color, and their pulp adds body to the gel.
Whipped cream
Adds fat and air, giving a lighter, creamier texture to the set dessert.
Sugar
Sweetens the pulp and balances the tartness of the strawberries.

The step that matters

Dissolving the gelatin fully. Gelatine must be softened in cold water, then melted gently over hot water so no granules remain. Undissolved gelatine leaves gritty specks and weak spots, and boiling can reduce its setting strength.
