Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turtle beans (black beans)
Break down during long cooking and, pressed through a colander, thicken the soup body.
Soup bone
Releases flavour and body into the water during the long simmer.
Powdered cloves
Add warm, aromatic spice flavour to the soup.

The step that matters

Straining with pressure on the bean pulp. Pressing the cooked beans through the colander pushes soft pulp into the liquid, which sets the final thickness. Pressing too little leaves the soup thin, while pressing too hard can push through bits of skin and make it cloudy.

Swap the beans

How well each one fits the dish's main ingredients (clove, pepper, egg, lemon):

  1. Chickpeafits better
  2. Walnutfits about as well
  3. Chestnutfits about as well
  4. Beansthe original

Fit is the average pairing score against clove, pepper, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
