What each ingredient does

Salt mackerel
Is the main protein; soaking draws out excess salt so the fish is palatable.
Butter
Adds fat and richness, carrying flavour and keeping the fish moist in the oven.
Sliced lemons
Adds acidity that brightens the rich, salty flavour of the fish.

The step that matters

Soaking the salt mackerel. Salt mackerel is very salty, so soaking it for a few hours in changing water removes surplus salt. Skipping or shortening the soak leaves the fish too salty to enjoy.

Swap the lemon

How well each one fits the dish's main ingredients (butter, pepper, fish sauce):

  1. Limefits better
  2. Mangofits better
  3. Lemonthe original
  4. Coconutfits about as well

Fit is the average pairing score against butter, pepper, fish sauce. Candidates are from the same food group and used in at least 100 recipes.
