Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Cut the chicken open and lay it flat in a pan, breaking down the breast and back bones.

  3. Dredge the chicken with flour and season well with salt and pepper, adding bits of butter.

Bake and finish

  1. Bake in the hot oven until done, basting frequently with melted butter.

  2. When half done, remove the chicken and finish by broiling it on a grill over bright coals.

  3. Pour melted butter and the pan juices over the chicken before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which cooks through and becomes tender as it bakes.
Flour
Coats the skin so it browns and crisps during cooking.
Butter
Adds fat and richness, moistening the meat and helping the skin brown.

The step that matters

Finishing over bright coals. Moving the chicken to a hot grill after baking can scorch the flour coating before the meat is cooked through. Watch the surface closely and keep the heat even so the skin browns without burning.
