Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and roast

  1. Preheat the oven to 400°F (200°C).

  2. Dredge the beef roast lightly with flour and season with coarse sea salt and black pepper.

  3. Place the roast in the oven and baste frequently while roasting.

  4. Roast for 15 minutes per pound for rare, longer for well done.

Make the sauce and serve

  1. For the sauce, collect drippings from the pan and add Worcestershire sauce and tomato ketchup.

  2. Thicken the sauce with browned flour and serve in a gravy boat.

What each ingredient does

Beef roast
Provides the main protein; its surface browns and its interior cooks to the chosen doneness.
Flour
Light dredge that helps the roast's outside brown and adds body to the drippings.
Worcestershire sauce
Adds savory, tangy depth to the drippings for the sauce.
Tomato ketchup
Adds sweetness and acidity to the drippings for the sauce.
Browned flour
Thickens the sauce while adding a toasted, nutty flavor.

The step that matters

Roast for 15 minutes per pound. Time per pound is only a guide, since roast size, shape and starting temperature change how fast the centre heats. Checking the internal temperature with a thermometer is the reliable way to reach the doneness you want without overcooking the outside.

Swap the tomato

How well each one fits the dish's main ingredients (beef, flour, pepper, sauce, ketchup):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against beef, flour, pepper, sauce, ketchup. Candidates are from the same food group and used in at least 100 recipes.
