Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf, providing protein structure that sets when baked.
Eggs
Bind the meat and crackers together and help the loaf hold its shape as it sets.
Crackers
Absorb moisture and fat, keeping the loaf tender rather than dry and crumbly.
Salt pork
Adds fat and savoury flavour, keeping the lean veal moist during baking.
Butter
Adds richness and moisture, and browns the top of the loaf.

The step that matters

Packing the mixture tightly into the tin. Tight packing removes air pockets so the loaf bakes firm and sliceable. Covering it during the long bake traps steam, keeping the lean veal from drying out before the top is browned.

Swap the celery

How well each one fits the dish's main ingredients (veal, pork, butter, egg, pepper, sage):

  1. Marjoramfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Celerythe original

Fit is the average pairing score against veal, pork, butter, egg, pepper, sage. Candidates are from the same food group and used in at least 100 recipes.
