What each ingredient does

Calf's liver
The main meat, which becomes firmer and more tender as it cooks slowly.
Salt pork
Adds fat and savory flavor as it renders into the liver and onions.
Onions
Release sweetness and moisture as they soften during cooking.
Vinegar
Adds acidity that brightens the rich flavor of the liver.
Salad oil
Adds fat that helps keep the liver moist during cooking.
Claret
Adds acidity and wine aroma to the cooking liquid.

The step that matters

Cook the liver over low heat. Liver is lean and dense, and high heat or long cooking tightens its proteins, making it dry and tough. Gentle, low heat keeps it tender and moist.
