What each ingredient does

Raw egg yolks
Emulsify the olive oil into the dressing, giving it a thick, creamy body.
Olive oil
Adds fat and richness, and with the yolks forms a smooth emulsified dressing.
Hard-boiled egg yolks
Mashed into the dressing, they add richness and a creamy texture.
Mustard
Adds sharp flavor and helps stabilize the emulsion.
Vinegar
Adds acidity that brightens the dressing and balances the richness of the yolks and oil.
Chicken breasts
Provide the main protein and bulk of the salad.

The step that matters

Gradually add the olive oil. Adding oil slowly to the beaten yolks lets tiny droplets disperse and be held by the lecithin in the yolk. Adding it too fast can break the emulsion, leaving the dressing oily and thin.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, olive, pepper, mustard, vinegar):

  1. Tarragonfits better
  2. Capersfits better
  3. Garlicfits better
  4. Celerythe original

Fit is the average pairing score against chicken, egg, olive, pepper, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
