What each ingredient does

White spine cucumbers
Form the crisp, watery bulk of the salad that the brine and vinegar flavour.
White onions
Add sharpness and aroma that mellow during the long resting period.
Green peppers
Contribute fresh, slightly bitter vegetable flavour and crunch.
Black mustard seed
Provides pungent, sharp heat that develops as the seeds soften in vinegar.
White mustard seed
Adds mild, tangy mustard flavour to the pickling mixture.
Celery seed
Adds a savoury, aromatic celery flavour.

The step that matters

Draining the mixture for 24 hours. Salt draws water out of the vegetables by osmosis. Draining removes that liquid so the cucumbers stay crisp and the vinegar is not diluted, which keeps the finished salad from becoming soggy.
